WHAT IS THE DIFFERENCE BETWEEN JAM AND JELLY?

There are three kinds of jelly. One is animal jelly called gelatin that is made by boiling muscles, cartilage and skins of animals in water. Another jelly comes from starch and can be found in arrowroot, cornstarch, sago and tapioca.

But when you say jelly, most of us think of the kind that is made from fruit.

Jelly is made by mixing the juice of fruit with sugar and then boiling it until it jells. Some fruits have a substance called pectin that makes jelly thicken. Commercial pectin can be purchased in powder or liquid form and added to the juice and sugar.

Jam is made from fruit pulp, rather than just the juice. Fruit pulp and sugar are cooked together using the same methods as in jelly.

Andy likes either jam or jelly added to his peanut butter sandwich.
